Refractometry is the technique that measures how light is refracted when it passes through a given substance Refractive index is defined as the ratio of the velocity of light in air to the velocity of light in the medium being measured. Brix Refractometers measure soluble solid concentration of sugars, proteins, and more in foods and liquids. Salt Refractometers measure salt concentration in foods or liquids. Wine Refractometers measure alcohol content in wines before and during fermentation.
